I almost returned the pan until I leaned how to cook with it and now love it.

I use (~2 tablespoons) olive oil, ~1 tsp. Kosher Salt, and 2 paper towels in a clump, to clean it every time.

I use Smart Balance (lots) to cook with like french toast, eggs, etc.. or some olive oil and water to steam/cook stir frys.

Put butter in pan and 3/4 high heat, very hot, you need it for the food not to stick, and get a metal type spatula (plastic will melt). Turn off heat when your food is 1/2 to 3/4 done, the pan stays hot for a long time, and cooks evenly.

I forgot to mention that this pan is huge (big, ect..) it is just what I wanted, one pan to do all and it does and replace my coated cheap pans I have to keep on replacing (due to the non stick coming off, burning off, scraping off, etc.. and the non sticks can not take the heat that this pan can). Very heavy and made extremely well!

The cover is great, fits perfect...
